I'm sure there is somewhere here that I can turn a mummy thing into a coaching thing- let me know if you can spot the analogy...
My lo has a thing about eating anything that is green (aside from crayons and peas) so I am creative with meals and ways to hide broccoli, courgette and spinach.
I have found this great recipe which she inhales with abandon. It does require a bit of sauce to 'wet it' but I use a great tomato/ratatouille- type concoction, in which I again hide a number of vegetables! It is a double-whammy shot of nutrients and vitamins and all things good and allows me to cook beans and toast for a good few meals, guilt-free.
VEGE PATTIES
1/4 cup red lentils
1 medium potato, chopped
1/4 cup frozen peas
1/2 small carrot, grated finely
1/2 small onion, grated coarsely
1/2 cup packaged breadcrumbs
Cook lentils in small saucepan of water uncovered for about 10 mins or until tender.
Meanwhile cook potato and peas, and mash together.
Add lentils, carrot, onion and half breadcrumb quantity into mash mixture. Combine; shape mixture into 12 patties and coat with remaining breadcrumbs.
Cook on medium heat in frying pan with oil until browned on both sides.
Alternatives:
- grate in any vege or throw in some frozen spinach with the peas
- add in 1/4 tsp of ground cumin and 1/4 tsp of ground coriander to the mixture for a bit more flavour- quite bland otherwise
