Oven-roasted Ratatouille
I was sent through this recipe for oven-roasted ratatouille by a colleague, Anna Mason from Distance Dieters and I was more than happy to post it on my site! It can be used as a sauce, as a vegetable on it’s own or can be baked with fish or chicken to make an all in one dish. It is under the ‘lunch’ heading but can be used for anything. Little ones fine it enjoyable too as it tastes naturally sweet and appeals to their taste buds.
