Shortbread Biscuits

Yummy and quick- but a great easy recipe to get your kids involved with you!

SHORTBREAD BISCUITS

Prep time: 10 mins     Cooking time: 8 mins    Makes: about 8 biscuits
 
50g/2oz butter, softened
25g/1oz icing sugar
1 tsp milk
vanilla essence
75g/3oz plain flour
writing icing for decorating

Heat oven to 180C/350F/Gas 4
 
1. Put butter into bowl and stir until really soft and smooth. Then sift in icing sugar and stir in.
2. Add the milk and a few drops of vanilla essence, then mix in well.
3. Sift flour into the bowl and mix in. Squeeze into a ball of dough.
4. Sprinkle flour on to surface and roll out dough to about 5mm/1/4 inch thick.
5. Cut out using cookie cutters. Lift them on to a greased baking sheet.
6. Bake for about 6-8 minutes.
7. Leave to cool then decorate.

Healthy tip: don't eat them all at once!
