These are the most simple to make morsels of yumminess and look really impressive!
I have to apologise for the ingredients list for this recipe. It has come via my mum who is an 'intuitive baker' (think: a splash of this and a dash of that) and originally from the NZ cooking guru, Alison Holst. If you want a more specific recipe, give my mum a call. But good luck on getting anything more detailed than what is below.
It is worth trying the recipe multiple times just to get the quantities how you like them- for research sake of course!

1/2 packet rich tea biscuits- blended to fine crumbs
1/4C cocoa
1C icing sugar
1/2C dessicated coconut
100g softened unsalted butter
a splash of sherry or brandy or rum (do not overdo...)
1/2C chocolate chips

Mix everything together.
Form mixture into bite sized balls. Roll in extra coconut to cover.
Set in fridge til hardened.

Healthy tip: substitute the alcohol for a dash of vanilla essence
Mum's tip: double the recipe and freeze one batch to have on hand for easy but impressive afters at a dinner party.
Mum's bonus tip: roll in extra cocoa, instead of coconut, for a more decadent look.
