This Pancake Recipe comes courtesy of Jamie Oliver. I don't normally use his recipes but this one is simple, easy and yummy!
Pancakes
Serves: makes 3-4 large Preparation: 2 mins Cooking time: 2-3 mins
1 cup of self raising flour (you can use any 'cup' but use the same one for the milk)
1 cup milk
1 egg
pinch of salt

Whisk all together. Add ingredients: grated apple, grated pear, raisins... you name it, put it in!
The mixture can be quite thick- great if you like your pancakes like that but otherwise just add a bit more milk to make it runny.
Pour into a warm fry pan- keep the heat med-low. Flip when bubbles appear on surface of mixture- 1 min approx. Cook other side til golden brown.
Serving suggestions:
maple syrup, natural yoghurt and berries
lemon and sugar
chocolate spread
bacon and maple syrup
Mum's/Healthy tip: make this a more substantial lunch by adding spinach and feta
